Breakfast Idea: Breakfast Burrito

Here is a spicy way to wake up-- the Breakfast Burrito. This recipe serves one-- double or triple as necessary.  Prep time is under 10 minutes.

Here's what you need:

  • 1 flour tortilla
  • 2 eggs
  • 3 tablespoons of cheese (Monterey or Cheddar)
  • 1/2 small onion, chopped
  • 1 tablespoon of salsa
  • 1 teaspoon of butter
  • Dash of salt
  • Dash of pepper
  • Dash of Hot Sauce

Here's what to do:

  • Preheat the oven at 325 degrees
  • Put tortillas with cheese sprinkled on them on a cookie sheet in the oven a few minutes or until cheese melts
  • Scramble and cooks the eggs with the other ingredients
  • Put cooked eggs and ingredients in the tortilla
  • Roll and serve hot

    This is almost identical to how I make my breakfast Burritos. They are yummy!

    The only things I do different is no butter, I add red capsicums and make my own bread but it does not add too much to the time as I keep the dough in the fridge and just pull a bit off, roll it out and it pan fries in a less than two minutes.
