Breakfast Idea: Breakfast Burrito
Here is a spicy way to wake up-- the Breakfast Burrito. This recipe serves one-- double or triple as necessary. Prep time is under 10 minutes.
Here's what you need:
- 1 flour tortilla
- 2 eggs
- 3 tablespoons of cheese (Monterey or Cheddar)
- 1/2 small onion, chopped
- 1 tablespoon of salsa
- 1 teaspoon of butter
- Dash of salt
- Dash of pepper
- Dash of Hot Sauce
Here's what to do:
- Preheat the oven at 325 degrees
- Put tortillas with cheese sprinkled on them on a cookie sheet in the oven a few minutes or until cheese melts
- Scramble and cooks the eggs with the other ingredients
- Put cooked eggs and ingredients in the tortilla
- Roll and serve hot

This is almost identical to how I make my breakfast Burritos. They are yummy!
The only things I do different is no butter, I add red capsicums and make my own bread but it does not add too much to the time as I keep the dough in the fridge and just pull a bit off, roll it out and it pan fries in a less than two minutes.
